Bowl meals= best meals. Okay, that hot take may not be for everyone, but I love a good bowl meal. We have been making various versions of this super easyBBQ chicken bowl for years now! Rotisserie chicken, pork chops, shrimp- it can be easily customized to your liking which makes it a perfect weeknight meal. This recipe is well-loved by my kids and my husband so it’s always in our rotation. It makes 4-6 servings (it’s also a great recipe to meal prep for lunches!).

Ingredients
For these BBQ chicken bowls you’ll need:
- 1 lb chicken breast
- BBQ seasoning blend- I like Kinders Woodfire Blend
- Olive oil to coat chicken breasts and sweet potatoes
- 2-3 small-medium sweet potatoes cut into small cubes
- Salt
- Pepper
- Cinnamon
- Pickles chopped for garnish
- BBQ sauce of choice to drizzle
Slaw Recipe
- 1 16 oz bag coleslaw mix
- 1/4 cup mayonnaise
- 1/4 cup Greek yogurt
- 1.5 tbs red wine vinegar or apple cider vinegar
- 2.5 tbs soy sauce or coconut aminos
- salt to taste

Prepping The Meal
*This meal can come together pretty quick depending on how you choose to prepare your meat. When we made this last week, we air-fried the chicken. However, to save even more time, you could purchase a rotisserie chicken, shred the meat and toss it in barbecue sauce. *

Preheat your oven to 425 degrees. Peel and dice your sweet potatoes, toss them in a little olive oil, and season them generously with salt and pepper. I like to give the potatoes a pinch of cinnamon, too but that can easily be omitted if cinnamon isn’t your thing. Pop those into the oven to roast for 25-30 min, giving them a good toss at the 15 minute mark. Again, I love this pan from Our Place to roast potatoes on. It is by far the most used pan in my kitchen and I will forever sing its praises.

While your potatoes are roasting, pat your chicken breasts dry, then give them a light coating of olive oil. We have been loving this Graza olive oil. Kudos to their marketing team, because the packaging is cute too! Next, give the chicken a generous seasoning of a BBQ seasoning blend. Preheat your air fryer to 400 degrees. Once heated, cook the chicken for 12-14 minutes. After that, check the temp and if it isn’t to 165 degrees, continue to cook for two more minutes, checking the temp until it’s finished. (this meat thermometer is fantastic. We misplaced the first one we purchased and after a few months trying to get by without it, we finally replaced it!)

While the chicken is doing its thing in the air fryer, prep your slaw. Combine the mayo, vinegar, and soy sauce (or coconut aminos). Give it a good whisk in the bowl until it’s nice and smooth. I always add a little salt, but salt is such a personal preference thing. Give it a taste and season to your liking. Toss the slaw mix in the sauce and set it aside while you chop up some pickles.


When the chicken is finished, pull it out and let it rest for a few minutes. I like it sliced, but my kids prefer it chopped up (again, no wrong choice, your preference!). To assemble the bowls, start with potatoes on the bottom, then tuck the slaw and chicken next to one another. Top with some pickles and a drizzle of your favorite BBQ sauce. Voila!

This meal comes together in about 30-35 minutes. It’s so yummy and it’s kid approved. Win win. If you decide to give it a try, let me know in the comments below!
