A delicious fakeaway meal in under 20 minutes? Say no more! This healthy egg roll bowl recipe comes together quick, making it an amazing weeknight meal. It’s one of those meals that requires minimal effort, but doesn’t skimp on flavor.

When I made this the other night, I threw it together after I put the kids to bed. Once it was done, I put my pajamas on, dished out the meal, and my husband and I watched some of our favorite shows on the couch. It felt like a little date night in!
Ingredients
For these egg roll bowls you’ll need:
- 1 lb ground meat; I used ground beef when I most recently made it because it’s what I had on hand, but ground chicken and ground pork are my favorites for this recipe.
- 1 16 oz bag coleslaw mix
- 3 tbs sesame oil
- 2 tbs olive or avocado oil
- 1 small yellow onion, chopped
- 1/2 cup soy sauce or coconut aminos
- 1 tsp ground ginger
- 3 garlic cloves, minced
- chopped green onion for garnish
- sesame seeds for garnish
Optional:
- Top with any sauce of your choosing! We love to use hoisin and sriracha sauce.

Prepping The Meal
Heat oils in a large skillet over medium heat. Once the oil is hot, brown your ground meat of choice. While the meat is cooking, chop up your yellow and green onions. Cook the meat until most of the pink is gone, then toss your chopped yellow onion into the skillet. Continue to cook until the meat is browned and the onions are translucent.

Next, mix in the ground ginger and minced garlic. After about a minute, toss your entire bag of coleslaw into the skillet. Slowly pour the soy sauce (or coconut aminos) over the slaw and carefully mix everything in the skillet. Continue to stir and cook down until the slaw mix is wilted down (about 3-5 minutes). At this point, everything smells glorious and you’re going to be very excited to eat!


Immediately scoop into bowls and top with green onion, sesame seeds, and if you want, any of the sauces I mentioned above. It definitely doesn’t need a sauce! It’s so delicious as-is, but I love a little heat to my dishes so sriracha sauce is my bestie.
